Hello folks. I'm new here. I live in London Ontario and for years had a (gasp) Starbucks Barista Zia machine which, after many years of faithful service, stopped working right. I decided it was time for a new machine.
Whereas the Zia had a small filter basket and I used pre-ground coffee, I got some decent product but now after an exhaustive and sometimes bewildering review of machines, I've decided to buy a Rancilio Silvia V3 and a Baratza Vario grinder.
That's all by way of background. While I'm not new to making espresso I am going to be a noob when it comes to using an "upscale" machine with a 58mm portafilter and a highly variable grinder. The question is really how do I go about adjusting the grind or even knowing when I need to adjust it? Keep in mind that my palate will be getting a re-education too.
